Quick and Easy Dinners: Veggie Bowls

Veggie bowls, these are my favorite quick and easy dinners. Grab a big bowl, chop up some simple fresh ingredients and call it dinner!

Smashed Falafel Bowls are my favorite bowls these days. Talk about a 10 minute meal!

Grab a can of chickpeas, drain and rinse them, then toss them into a pan with some coconut oil, lots of cumin and garlic powder (about 1 tbsp each), and let them get nice and crispy.

Add some chopped greens to a large bowl, top with some black olives, chopped red pepper, chopped cucumber, chopped tomatoes. Add in the crispy falafel chickpeas, add a tablespoon of hummus, drizzle some lemon juice and you've got super quick, super delicious, super easy, super healthy meal!
