Mexican Style Scrambled Eggs

Ingredients

4 Eggs whisked

4  Mushrooms chopped

1/2 Bell Pepper chopped

1/2 Red Onion chopped 

1/4 Cup Black Olives sliced

1/4 Cup Marble Cheese shredded

1/4 Avocaodo chopped

1/2 Cup Cherry Tomatoes chopped

1 Tbsp Butter

Salsa

Red Chili Flakes

Salt and Pepper

Method

In a preheated cast iron skillet melt butter.

Once butter is melted add mushrooms, peppers, and onions.

Saute until tender. 

Add eggs. Stir occasionally.

Once eggs are almost cooked add olives.

When eggs are fully cooked, turn off heat and add shredded cheese.

Cover and let melt.

​

Dish up eggs and top with salsa, avocado, cherry tomatoes, salt, pepper, and red chili flakes.

​
